This quick and easy salad is perfect for a light and satisfying lunch.

Grilled Chicken, Avocado, Spinach Salad

Servings Serving size:  1.5 cups


4 cups Spinach, baby, chopped
1 Avocado, medium (pitted and cut into thin slices)
1 Red Onion, sliced
12 oz Chicken breast, cooked, diced
4 Tbsp Walnuts, chopped
6 Tbsp Ranch dressing, fat-free


  1. In a large salad bowl, combine the spinach, avocado, onions, chicken, and walnuts.
  2.  Add the dressing and toss to coat evenly.
  3. If preparing ahead of time, divide the salad between four containers. Add 1 1/2 tbsp of dressing just before serving.
