This quick and easy salad is perfect for a light and satisfying lunch.
Grilled Chicken, Avocado, Spinach Salad

Servings Serving size: 1.5 cups
4 cups Spinach, baby, chopped
1 Avocado, medium (pitted and cut into thin slices)
1 Red Onion, sliced
12 oz Chicken breast, cooked, diced
4 Tbsp Walnuts, chopped
6 Tbsp Ranch dressing, fat-free
- In a large salad bowl, combine the spinach, avocado, onions, chicken, and walnuts.
- Add the dressing and toss to coat evenly.
- If preparing ahead of time, divide the salad between four containers. Add 1 1/2 tbsp of dressing just before serving.
